Comfort Food
When I’m stressed, I go straight to the kitchen. Baking, fixing, feeding people…it just helps. Especially over the past few weeks, I have turned to this corner of my house to let some anxiety go and feed the ones I love. Here are a few recipes for a cocktail, tacos, and cookies (what a combination right?) that I have cranked out the past week.
First up, the cocktail. From Sideshow Pete, it’s called the Gardner’s Tonic. If you need some new coupe glasses, here is a (big) splurge option…it’s just stunning. Also, I love this one for more of a practically price choice.

1.5 oz Gin
1 oz Lemoncello
1 oz Lemon Juice
.25 oz Simple Syrup
2 dashes Bitters
Tonic Water
In a shaker, combine all ingredients, then top with Tonic Water!
Next up, Coca-Cola Brisket Tacos. The name says it all. If you need a dutch oven, this is what I have and love it!
Lastly, Bob’s Favorite Cookies. If you like to bake, and don’t have a stand mixer, this might be a good time! William-Sonoma is doing 20% this one right now.
First, preheat oven to 350
1 cup softened butter
3/4 cup brown sugar
2 eggs
3/4 cup sugar
1/2 cup rolled oats (not quick cooking) grind in food processor until course, not pwder!
2 1/4 cup flour
1 T vanilla paste
1 t Kosher salt
1 t baking soda
1 cup heath bits
1 cup chopped pecans
1/2 cup semi-sweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup dark chocolate chips
1 cup dried tart cherries
Cream butter, sugar, drop eggs in one at a time. Then add vanilla, flour (slowly!), rolled oats and mix. Add salt and baking soda then slowly mix in all chocolate chips, cherries and heath bar bits.
Once mixed in, use an ice cream scoop (easiest way!) separate them on baking sheet a couple of inches, and bake for 12-15 mins.
